    habicook: delicious Cosy Kitchen waterzooi

    DELICIOUS COSY KITCHEN WATERZOOI

    Waterzooi is a delicious and pure stew with chicken, carrot, leek, and celery. A tasty dish to be proud of, as it is one of our Belgian classics.

    INGREDIENTS FOR 4 PEOPLE:

    • 1 large corn-fed chicken, cut into pieces
    • 6 potatoes, peeled and diced, waxy (Nicola)
    • 3 carrots, julienned
    • 4 young carrots
    • 3 stalks of celery, julienned
    • 1 leek, julienned
    • 3 egg yolks
    • 1½ liters vegetable broth
    • 400 ml cream (preferably Cooking Cream, culinary cream)
    • 2 tbsp butter
    • 1 bunch of parsley, finely chopped
    • pepper and sea salt
    • Bay leaf
    • 150 grams of fresh young spinach leaves
    • Finishing touches: options to choose from: 
      watercress - mustard greens - crazy Pea - edible flowers - Rouge Crapaudine, Bull's Blood, ...

    PREPARATION:

    Step 1: Bring the vegetable broth to a boil. Add the chicken pieces + peeled and diced carrots and cook them for 45 minutes in the broth over medium heat. Add bay leaf, pepper, and a pinch of sea salt.

    Step 2: Peel the young carrots and cut them diagonally into 2 pieces.

    Step 3: Remove the chicken from the broth and let it cool slightly. Skin the chicken pieces and shred them by pulling them off the carcass.
    TIP (!) don't forget the Both Sot-l'y-laisse (also known as chicken oysters - super tender and delicious!!), an unknown piece of chicken meat on both sides of the carcass, where the chicken thighs begin.

    Step 4: Melt the butter in a large stew pot. Add the peeled young carrots. Add the julienned vegetables and potatoes and sauté them over medium-high heat. After 5 minutes, add the chicken pieces. + washed spinach leaves

    Step 5: Strain the vegetable broth and pour it into the stew pot. Add 2/3 of the cream and stir well. Let it simmer for 10-15 minutes over low heat. Season with pepper and salt.

    Step 6: Mix the egg yolks with the remaining cream and beat lightly.

    Step 7: Remove the stew pot from the heat and stir the egg yolk mixture into the waterzooi. (do not let it boil again!!)

    Step 8: Divide the chicken waterzooi among the preheated plates. Garnish with the selected garnishes of your choice.
